  • 2 TB Butter
  • 1 Medium Onion Diced
  • 2 Carrots Sliced
  • 2 Celery Diced
  • 3 Garlic Cloves Minced
  • 6 Cups Chicken Broth
  • 1 Cup Heavy Cream or Half-and-Half (for lighter version)
  • 1 TSP Dried Thyme
  • 1 TSP Dried Parsley
  • 2 Cups Cooked Shredded Chicken Rotisserie Chicken
  • 2 Cup Egg Noodles
  • Salt and Pepper To Taste
  • Fresh Parsley For Garnish

  • In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Sauté until softened, about 5 minutes. Stir in minced garlic and cook for another minute.
  • Pour in the chicken broth and bring it to a boil. Add the egg noodles and cook according to package instructions until tender. This step ensures the noodles soak up all the delicious flavors.
  • Once the noodles are cooked, lower the heat and stir in the shredded chicken and heavy cream. Add the dried thyme, dried parsley, salt, and pepper to taste. Let everything simmer gently until the soup is heated through.
