One Pot Mushroom Risotto

Ingredients
  

  • 1 cup Arborio Rice
  • 4 cups Vegetable or Chicken broth
  • 1 cup Mushrooms sliced
  • 1 Small onion finely chopped
  • 2 Cloves garlic minced
  • 1/2 cup White wine (optional)
  • 1/2 cup Parmesan cheese grated
  • 2 tbsp Olive oil
  • Salt and pepper to taste
  • Fresh Parsley for garnish

Instructions
 

  • Step 1: Warm the broth. Keep it over low heat in a small saucepan.
  • Step 2: Sauté aromatics. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 3 minutes). Stir in garlic and mushrooms, cooking until the mushrooms are tender and fragrant (5 minutes).
  • Step 3: Toast the rice. Add arborio rice to the pot and stir for 1-2 minutes, letting it absorb the flavors.
  • Step 4: Add wine. Pour in the white wine (if using) and let it simmer until mostly absorbed.
  • Step 5: Gradually add broth. Start adding the warm broth one ladle at a time, stirring frequently. Wait for the liquid to absorb before adding more. Repeat this process for about 20 minutes until the rice is creamy and tender.
  • Step 6: Finish with cheese. Stir in Parmesan cheese and season with salt and pepper to taste. Garnish with fresh parsley and serve hot.
